Summer Pesto

But it’s been off my mind for quite some time (inexplicably!) & has only recently been rediscovered & -cherished. This basic Pesto is very quickly done, tastes super-yummy & can be prepared in large amounts & kept frozen. You will need basil, rocket, roasted pine nuts (if you consider skipping the roasting: don’t. It really makes a difference!), olive oil & parmesan. By making use of Missmodernage’s all-time favourite kitchen tool (the hand blender) puree everything & voilà, that’s it. You may want to season it a bit. Missmodernage always adds some chili & broth.
